Option 1: Slice eggplant into thin circles, and make small individual ‘pizzetas’ on a pan. Precook eggplant for about 15 min and then add tomato sauce and cheese on top (or any other ingredient you like).
Option 2: Thinly slice eggplant into circles (about 1/2 cm thick). Lightly oil and salt and bake in oven until browned, you may need to flip and do the other side. Once cooked, overlap slices of eggplant to make a bigger pizza and top with sauce and cheese.
Option 3: And in my opinion the best!! It’s absolutely delicious and healthy (read more about eggplants below)
Ingredients:
- 1 eggplant
- 200g ricotta cheese
- 2 eggs
Instructions:
- Chop eggplant into small cubes and steam for about 10-15 min, then drain and set aside. I always keep the skin on everything, it’s the healthiest part and added fiber. (Alternatively if you have a electric blender, you can keep chunks large and blend afterwards with egg and ricotta)
- Beat the eggs, add ricotta and continue to mix until blended. Add dried eggplant (pad dry with towel if needed). (Alternatively place eggs and ricotta in electric mixer and blend, then add pre-cooked eggplant and pulse a few times to blend – careful not too much!)
- Grease a pizza tray and add mixture, spreading out to create a thin crust. Cook on high for about 20 min.
- Add sauce and your favourite toppings and cook for about another 10 min.
Healing Properties of Eggplants:
Anti-Cancer: Chlorogenic acid in eggplant is an anti-oxidant that helps decrease LDL (the bad cholesterol). It also has anti-mutagenic properties, meaning it protects your cells from mutating into cancer cells. Another antioxidant in the skin of eggplant (nasunin) prevents growth of new blood vessels to supply the growth of cancer cells.
Lower Cholesterol: Along with chlorogenic acid lowering LDL cholesterol, eggplant is an excellet source of fibre to help decrease cholesterol as well.
